Cheesey scones

Today is Bank Holiday Monday - a day that should be filled with...I dunno, a trip to the beach in the rain, James Bond films, some kind of argument driven DIY. We ignored all those stereotypes and did some baking in our PJs instead. 

First up we made these deeeeeeeeelish cheesy scones. I've never successfully made scones before so I'm pretty smug pleased with these ones. 

If you want some delicious in your day here's what you need.


400g self raising flour
1/2 tsp salt
1 tsp chilli powder
80g butter
150g strong mature cheddar
200ml semi skimmed milk

And to create the magic;

Pop your oven to 220 to pre-heat and get a tray all greased up ready.

Put your dry ingredients together and mix. Add your butter and rub in your fingers until you have something a bit like breadcrumbs. Then mix in your cheese well, and gradually add your milk and mix with a knife to bring it all together. 

Then roll your dough on a floured surface until it's about 2-3cm thick, cut with your cutters (don't go all traditional, dude - it's all about hearts and stars) lay them out on the tray with a bit of space between then whack in your oven for ten minutes or so. 

Then try to get your mouth around one before the blooming kids eat them all up. 

For added yums add a slice of ham, some more cheese (don't you judge me) and a splash of chilli sauce and make a meal of it.
